The complexity of coffee aroma

We all know that a good cup of coffee is delicious. But just how complex is the coffee aroma? An article* published by a group of Brazilian researchers set out to answer this question.

César et al analyzed 3 commercial brands of coffee using a technique called “headspace”. They found that the aroma of a cup of coffee is composed of 91 substances, ranging from 2-Methylfuran and Acetaldehyde to Pyrazine and Methyl acetate. Below is the complete table:
